What to eat Wednesdays - Sweet cabbage salad


Don't be fooled by the fact this is a cabbage dish - it is truly delicious. I've made it at several SU camps for teenagers now and it's always a raving hit. At around $1 to serve 8, this family recipe is fantastically frugal.

Ingredients
  • 1/2 cabbage
  • 1/2c white vinegar
  • 3T white sugar
  • 2T poppy seeds


Method
1. If you're starting with a whole cabbage, cut it in half from top to bottom.

2. Cut out the white core of the cabbage.

3. Finely shred the cabbage using a large sharp knife. (This is not a good example of finely shredded - I usually get Paul to do it because he has way better knife skills than me.)

4. Stir the sugar into the vinegar and wait for it to dissolve.

5. When you're ready to serve the salad, pour the vinegar dressing and poppy seeds over the top and toss through.
